Fondazione Edmund Mach (FEM) will recruit two ESRs within Research and Innovation Centre Units of Traceability (ESR 1 - supervisor Dr. Luana Bontempo) and of Nutrition and Nutrigenomics (ESR 2 - Dr. Elena Franciosi):ESR 1 will apply the most advanced techniques in stable isotope ratio analysis to develop methods for the characterization of organic and conventional pasta, rice and cereals in general, as well as for their geographical traceability. Furthermore, in collaboration with Barilla company will look at ways to valorise rice and wheat residues, will obtain knowledge of the technological preparation of pasta and on the mycotoxin analysis by Mass Spectrometry. Secondment periods are planned at Barilla company, at INIA - Madrid and at JSI - Ljubljana,ESR2 will validate methods to verify the authenticity of traditional raw milk cheeses, will identify the presence of bioactive compounds and viable probiotic bacteria in traditional raw milk cheeses and in novel dairy products added with healthy and functional bacteria and will create a database of authentic samples of raw milk cheeses.
